A nice alternative to oatmeal. You can store the quinoa in the refrigerator for up to 3 days in an airtight container.

1/2 cup Quinoa
3/4 cup Unsweetened Almond Milk
1/2 tsp Vanilla extract
1/4 tsp Sea Salt
1/4 tsp Ground Cardamom
1/2 Fresh Pear
2 Tbs Sliced or coarsely chopped Almonds
1. Bring to a boil in a medium sauce pan, the quinoa, Almond milk, vanilla extract and 1/2 cup of water
2. Once mixture boils, reduce heat and simmer, covered until liquid is absorbed, about 15 min. You may need to add a little bit of additional water to make sure the quinoa is cooked through.
3. Remove from heat and let rest 5 minutes, then fluff with a fork.
4. For each serving, place 1/2 cup of Quinoa in a bowl and top with 1/2 cup of Almond milk, 1/2 of a sliced pear (or apple) and the sliced or chopped almonds.
