Confetti Corn Salad

This simple recipe is a wonderful salad for your picnic basket.  You might even like to change it up a bit by adding fresh cherry tomatoes or other seasonal vegetables.  There is no dressing so the flavors come from the vegetables you have put together and the flavors from the herbs.

Ingredients

  • 1/2 cup chopped red onion
  • 1 small orange bell pepper, diced
  • 2 Tbls of Ghee or grapeseed oil
  • 5 ears of yellow or white corn (4 cups) Kernels cut from the cob
  • 1-1/2 tea Redmonds REAL Salt
  • 1 tea fresh ground pepper
  • 2 Tbls chiffonade cut fresh basil, minced fresh chives, and or fresh parsley

Directions

1.  Heat the Ghee over medium heat in a large sauté pan. Add the corn, and cook until just slightly browned. 5-7 minutes stirring occasionally.

2. Mix together all of the other ingredients in a large bowl and then add in the browned corn.

3. Toss together well and serve warm or place in the fridge to cool and pack in your picnic basket.

Notes

You can add a bit of avocado to this salad but wait to add until you are serving it.
