Grapefruit and Avocado Salad

NOTE:  the vinaigrette recipe makes more dressing than you will need for the amount of avocado and grapefruit.  Just put the extra in a small glass jar (jelly jar) and refrigerate to use on another salad later.

Ingredients

The Salad
  • 2 avocados, peeled and sliced

  • 2 grapefruits, peeled, segmented, seeds removed 

  • baby spinach greens

Citrus vinaigrette:

  • 1/2 shallot minced (1 tablespoon)

  • 1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano

  • 1 1/2 teaspoons lime zest

  • 3 tablespoons lime juice

  • 1/2 cup olive oil

  • 1 teaspoon raw honey 

  • 1/4 teaspoon Redmonds REAL salt

Directions

Making the Dressing
  1. Mix the lime juice with the honey and stir until dissolved.
  2. Add all of the other ingredients and mix thoroughly.
NOTE:  You can also add all ingredients to a small blender and blend them together.

The Salad
    1. In a small bowl, mix the vinaigrette ingredients
    2. Prep the grapefruit segments
    3. Peel and slice avocados
    4. Place a small pile of baby spinach on a plate and arrange slices of avocados and grapefruit segments on top of the spinach alternating grapefruit and avocado.
    5.  Spoon dressing over the salad.

Notes

If you can't have grapefruit, oranges work in this recipe just as nicely.
