No Bake Peanut Butter Oatmeal Cookies

These cookies don't have a cook time but a Fridge time to harden the cookie.  They are a great treat to take in your picnic basket as a desert you can eat with your hands (no plates or silverware involved).  If you like a bit more chocolate, you can always add semi-sweet morsels to the dough.

Ingredients

  • 1/2 cup Natural peanut butter or Almond butter
  • 1/4 cup pure maple syrup or raw honey
  • 1/4 cup coconut oil (measured in the solid state)
  • 2 Tbls unsweetened cocoa powder 
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Redmonds REAL salt
  • 1 cup Gluten Free rolled oats
  • 2 Tbls shredded or flaked coconut
  • 2 Tbls chopped peanuts or nut of your choice
  • 1/2 cup of semi-sweet chocolate chips

Directions

1.  Line a cookie sheet with parchment paper

2.  In a saucepan over medium heat, combine the peanut butter, maple syrup and coconut oil.  Stir until melted.  Add the cocoa powder salt, cinnamon and vanilla extract.

3.  Remove from heat and add the oatmeal, coconut and peanuts or nuts.  

4.  Place in the fridge for at least 30 minutes to harden.  Store in fridge
