Portabella Mushroom Fajitas

This nutritious vegan meal is rich in potassium and B vitamins like riboflavin. Mushrooms in general are known for fighting cell damage, improves brain function, supports bone health (loaded with Vit D3), and lowers risk of Diabetes.

2 - 3 Servings

Ingredients

1 - 2 large      Portabella mushrooms, de stemmed and sliced into long strips

1/2                 Red onion, sliced across the grain of the onion

1/2                 Red bell pepper, sliced into strips

1/2                 Yellow bell pepper, sliced into strips

2-3                 Cloves of garlic chopped

2-3 Tbls         Grapeseed or Coconut oil

2 Tbls            Fajita seasoning (Penzeys Seasoning or other)

1/4 tsp           REAL Salt

1/2                 Fresh Lime

6                    Organic flour tortillas


Directions

1)  Cook the Onions and Garlic with the Bell peppers on med-high heat in oil until limp and slightly brown

2)  Add the mushrooms, seasoning and salt to the pan, stir to mix and then cover and continue cooking until the mushrooms are soft and nearly all changed in color (grey brown).  Stir often

3) Squeeze the Lime onto the vegetables, cover again and steam for 1 minute.  Remove from heat and serve with organic flour tortillas and sides listed below.

Notes

I like to serve fajitas with black refried beans, salsa, slices of avocado and a bit of goat cheese
